I've spend most of the day working on my wonderful Arabic midterm. At the moment i have a disjointed translation and a few of the questions answered. It will defiantly take all of tomorrow to finish it.
I made a lasagna dish for dinner. I still need to work on it a bit, but it was pretty good for the ingredients I had available.
Chicken lasagna
Ingredients:
3 small chicken breasts
6 oz lasagna noodles, cooked according to package directions
1 small onion, chopped
1/3 carrot, chopped
1/3 green pepper, chopped
2 cloves garlic, smashed & chopped
1 tbs olive oil
tomato sauce ( I don't think i used enough this time)
mozzarella cheese (the cheese tasted different than usual, more like string cheese and less like baked mozzarella...hard to describe, but i think i need to use ricotta next time....which i normally use in lasagna but didn't have)
parmesan cheese
salt & pepper
Directions:
1. Preheat oven to 375º.
2.Heat 1/2 tbs oil in a pan over medium heat. Saute vegetables until soft, about 10 minutes. Set vegetables aside.
3. Add the other 1/2 tbs oil to the pan. Cook chicken on both sides until no longer pink. Add salt & pepper to chicken.
4. Cover the bottom of a small (8x8) baking dish with sauce. Layer noodle across the bottom (they may need to be broken in 1/2 to fit.) Layer sauce, 1/2 vegetables, then sprinkle with cheese. Cover w/noodle, layer w/sauce, chicken, sauce, cheese. Cover w/noodles. Repeat 1st layer, then top with last layer of noodles, sauce and cheese.
5. Cover with aluminum foil and cook for 30 minutes. Remove foil and cook and additional 10 minutes.
