Will the paper writing ever end??? I spent the afternoon hiking around Fredericksburg w/my roommate. We went on a hike w/a group that is working to get the trials connected to make a longer one. We walked for about 2 hours. It twas fun, and the few times that the had go across the creak made the walk more exciting.
For dinner i messed w/a latke recipe that i have and came up with:
Autumn Latkes
Ingredients:
1 sweet potato, peeled and shredded
1 apple, peeled and shredded
2 eggs, beaten
1 tbs brown sugar
2 teaspoons ground cloves
2 teaspoons cinnamon
1/2 teaspoon ground nutmeg
4 tbs quaker oats
1/8 cup walnuts, chopped
1/4 cup vegetable oil, for frying
Directions:
1. Put potato and apple into a bowl. Place a few paper towel over them and squeeze out the liquid. Let the mixture sit for a few minutes and then squeeze again to remove more liquid.
2. In a large bowl mix together the potato/apple mixture, eggs, brown sugar, cloves, cinnamon, nutmeg, oats, and nuts, until the mixture is well combinded.
3. Heat the oil in a large skillet over medium high heat.
4. Drop a large spoonful of the mixture into the oil and cook 2-3 minutes on each side, until the bottom is brown.
5. Serve hot with yogurt and/or applesauce.
I am more than ready for the semestor to be over. Taking 20 creadits is not fun...especially when i have projects due in most of them. I'm not to worred about getting most of them done, i just dont' have any free time. The only issue i'm having is with a paper for my IR theory class. It has a weird prompt, and i don't like my thesis and have to change it...not any fun.
On a more intersting note i typed up the last recipe I made...before my workload quadroopled....it doesn't really have a name, i guess itz Chicken & Vegetables w/Wine:
Ingredients:
1 tbs olive oil
1 small onion~ chopped
1 medium squash~ chopped
¼ cup chick peas
1/3 cup corn
3 chicken breasts~ cubed
2 cloves garlic~ minced
1 tbs fresh ginger~ minced
1 tsp coriander???
1 bay leaf
Pinch salt
½ small bottle white wine
¼ cup vegetable stock
1 tsp cornstarch
Directions:
1. Marinate chicken in wine for ½-2 hours.
2. Add olive oil to a medium pan over medium heat. Add onion and cook for 5 minutes. Add chicken and cook for 5 minutes, stirring the chicken around the pan. Save the marinate.
3. Add squash, chickpeas, corn, garlic, ginger, salt, bay leaf, and coriander. Cook for 5 minutes. Add marinate and vegetable stock, cook for 20 minutes or until chicken is tender.
4. Remove chicken and vegetable to serving dish. Add cornstarch and bring liquid to a boil for 2 minutes. Serve over chicken and vegetables.
Since I spend way to much time cooking, I'm gonna waste more time and write up some of the recipes I use. I'll start w/a quiche I made tonight. I had a leftover piecrust in the freezer and since there wasn't really any room for it I had to use it up.
Vegetable Quiche
Makes 6 servings
Ingredients:
1 small onion ~chopped
1/4 pepper ~ chopped
6 baby carrots ~ chopped
3 cloves garlic ~ chopped
1/2 cup frozen spinach
1 1/2 Tbs butter
4 eggs
1 cup milk
1 Tbs Lebni***
1/2 cup cheddar cheese ~ graded
1/4 cup hard cheese ~ sliced
1 deep dish pie crust
***A combination of yogurt and cheese, can be found in Middle Eastern food
stores
Directions:
Preheat oven to 375º.
Melt butter over medium low heat. Add onion, pepper, carrots, and garlic. Cook until vegetables are soft, about 10-15 minutes. Add spinach and cook an additional 2-4 minutes. Turn off stove.
Combine eggs, milk, and Lebni, whisk.
Add Cheese to vegetable mixture. Spoon mixture into piecrust. Add egg mixture.
Bake for 30 minutes, or until quiche has set. Allow to cool for 30 minutes
before serving.
