        <p>Will the paper writing ever end???&#160; I spent the afternoon hiking around Fredericksburg w/my roommate.&#160; We went on a hike w/a group that is working to get the trials connected to make a longer one.&#160; We walked for about 2 hours.&#160; It twas fun, and the few times that the had go across the creak made the walk more exciting.</p><p>For dinner i messed w/a latke recipe that i have and came up with:<br />Autumn Latkes<br />

<br />Ingredients:<br />1 sweet potato, peeled and shredded<br />1 apple, peeled and shredded<br />2 eggs, beaten<br />1 tbs brown sugar<br />2 teaspoons ground cloves<br />2 teaspoons cinnamon<br />1/2 teaspoon ground nutmeg<br />4 tbs quaker oats<br />1/8 cup walnuts, chopped<br />1/4 cup vegetable oil, for frying</p><p>Directions:<br />1. Put potato and apple into a bowl.&#160; Place a few paper towel over them and squeeze out the liquid.&#160; Let the mixture sit for a few minutes and then squeeze again to remove more liquid.</p><p>2. In a large bowl mix together the potato/apple mixture, eggs, brown sugar, cloves, cinnamon, nutmeg, oats, and nuts, until the mixture is well combinded.</p><p>3. Heat the oil in a large skillet over medium high heat.</p><p>4. Drop a large spoonful of the mixture into the oil and cook 2-3 minutes on each side, until the bottom is brown.&#160; </p><p>5. Serve hot with <span style="font-size: 12pt; font-family: &quot;Times New Roman&quot;;">yogurt </span>and/or applesauce.<br /> <div><br /></div></p>   <p style="clear:both;">

        <p>I am more than ready for the semestor to be over.&#160; Taking 20 creadits is not fun...especially when i have projects due in most of them.&#160; I&#39;m not to worred about getting most of them done, i just dont&#39; have any free time.&#160; The only issue i&#39;m having is with a paper for my IR theory class.&#160; It has a weird prompt, and i don&#39;t like my thesis and have to change it...not any fun.</p><p>On a more intersting note i typed up the last recipe I made...before my workload quadroopled....it doesn&#39;t really have a name, i guess itz Chicken &amp; Vegetables w/Wine:</p>

<p class="MsoNormal">Ingredients:</p>

<p class="MsoNormal">1 tbs olive oil</p>

<p class="MsoNormal">1 small onion~ chopped</p>

<p class="MsoNormal">1 medium squash~ chopped</p>

<p class="MsoNormal">¼ cup chick peas</p>

<p class="MsoNormal">1/3 cup corn</p>

<p class="MsoNormal">3 chicken breasts~ cubed</p>

<p class="MsoNormal">2 cloves garlic~ minced</p>

<p class="MsoNormal">1 tbs fresh ginger~ minced </p>

<p class="MsoNormal">1 tsp coriander???</p>

<p class="MsoNormal">1 bay leaf</p>

<p class="MsoNormal">Pinch salt</p>

<p class="MsoNormal">½ small bottle white wine</p>

<p class="MsoNormal">¼ cup vegetable stock</p>

<p class="MsoNormal">1 tsp cornstarch</p>

<p class="MsoNormal">&#160;</p>

<p class="MsoNormal">Directions:</p>

</span>Marinate chicken in wine for ½-2 hours.</p>

</span>Add olive oil to a medium pan over medium heat.<span style="">&#160; </span>Add onion and cook for 5 minutes.<span style="">&#160; </span>Add chicken and cook for 5 minutes, stirring
the chicken around the pan.<span style="">&#160; </span>Save the
marinate.</p>

20 minutes or until chicken is tender.</p>

        <p><span style="font-size: 12pt; font-family: &quot;Times New Roman&quot;;">Since I spend way to much time cooking, I&#39;m
gonna waste more time and write up some of the recipes I use.&#160; I&#39;ll start
w/a quiche I made tonight.&#160; I had a leftover piecrust in the freezer and
since there wasn&#39;t really any room for it I had to use it up.
</p>
<p><strong>Vegetable Quiche</strong><br />
Makes 6 servings
</p><p>
Ingredients:<br />
1 small onion ~chopped <br />
1/4 pepper ~ chopped<br />
6 baby carrots ~ chopped<br />
3 cloves garlic ~ chopped<br />
1/2 cup frozen spinach <br />
1 1/2 Tbs butter<br />
4 eggs<br />
1 cup milk<br />
1 Tbs Lebni***<br />
1/2 cup cheddar cheese ~ graded<br />
1/4 cup hard cheese ~ sliced<br />
1 deep dish pie crust<br />
***A combination of yogurt and cheese, can be found in Middle Eastern food
stores
</p><p>
Directions:<br />
Preheat oven to 375º.
</p><p>
Melt butter over medium low heat.&#160; Add onion, pepper, carrots, and
garlic.&#160; Cook until vegetables are soft, about 10-15 minutes.&#160; Add
spinach and cook an additional 2-4 minutes.&#160; Turn off stove.&#160; 
</p><p>
Combine eggs, milk, and Lebni, whisk.
</p><p>
Add Cheese to vegetable mixture.&#160; Spoon mixture into piecrust.&#160; Add
egg mixture.&#160; 
</p><p>
Bake for 30 minutes, or until quiche has set.&#160; Allow to cool for 30 minutes
before serving.</span><br />
