Under a month to go until the end of the school year, and until graduation. Itz a bit hard to believe. Until then i've got a ton of work to finish. I made a small dent in my papers and projects today. By dinner time i was ready for a break so i used some of the beef i bought at super H to make a stir fry. It turned out very yummy. The beef made a huge difference. It tastes so much more tender then the meat from giant. I guess it makes sense since Asian cooking is where stir fry comes from.
Ingredients:
1/4 pound stir fry beef: sliced
1/4 cup soy sauce
1 tbs rice wine
1/4 tbs rice wine vinegar
1 carrot
1 small onion
1/2 pepper
4 oz mushrooms
2 cloves garlic
1 tbs peanut oil
Chinese 5 spice
rice noodles: cook according to package instructions
Directions:
1. Marinate beef in soy sauce and wine for 1 hour.
2. Slice into matchstick size: carrot, onion, pepper and mushroom. Chop garlic.
3. Heat 1/2 tbs oil in pan over medium heat. Add beef and cook until no longer pink. Remove beef and set aside.
4. Add remaining oil to pan, then cook the onions for 3 minutes. Add carrots and pepper, cook another 3 minutes. Add mushrooms, garlic and spice. Cook for 5 minutes.
5. Add back the beef. Mix together and serve.
I've spend most of the day working on my wonderful Arabic midterm. At the moment i have a disjointed translation and a few of the questions answered. It will defiantly take all of tomorrow to finish it.
I made a lasagna dish for dinner. I still need to work on it a bit, but it was pretty good for the ingredients I had available.
Chicken lasagna
Ingredients:
3 small chicken breasts
6 oz lasagna noodles, cooked according to package directions
1 small onion, chopped
1/3 carrot, chopped
1/3 green pepper, chopped
2 cloves garlic, smashed & chopped
1 tbs olive oil
tomato sauce ( I don't think i used enough this time)
mozzarella cheese (the cheese tasted different than usual, more like string cheese and less like baked mozzarella...hard to describe, but i think i need to use ricotta next time....which i normally use in lasagna but didn't have)
parmesan cheese
salt & pepper
Directions:
1. Preheat oven to 375º.
2.Heat 1/2 tbs oil in a pan over medium heat. Saute vegetables until soft, about 10 minutes. Set vegetables aside.
3. Add the other 1/2 tbs oil to the pan. Cook chicken on both sides until no longer pink. Add salt & pepper to chicken.
4. Cover the bottom of a small (8x8) baking dish with sauce. Layer noodle across the bottom (they may need to be broken in 1/2 to fit.) Layer sauce, 1/2 vegetables, then sprinkle with cheese. Cover w/noodle, layer w/sauce, chicken, sauce, cheese. Cover w/noodles. Repeat 1st layer, then top with last layer of noodles, sauce and cheese.
5. Cover with aluminum foil and cook for 30 minutes. Remove foil and cook and additional 10 minutes.
My coffee wasn't that good this morning (not sure what twas up, i made it the same way i always do....see previous post)....but it was ok cause made an awesome tasting mocha in the afternoon.
Itz a combination b/w a recipe for serendipity frozen hot chocolate and a mocha frappuccino recipe
Mocha Frappuccino
1/3 cup espresso or double strength coffee (i used my mocha pot)
1/2 ounce bittersweet chocolate
1 tsp coco powder
1 tsp sugar
1/2 cup milk
just over 1 cup ice
1. Melt the chocolate over a double boiler...make sure that the bowl is high enough that the water does not touch it or the chocolate will not melt correctly (if you have a microwave i think you can melt chocolate easily in it but i don't gotz one.) Add the sugar and coco powder and combine.
2. Remove the chocolate from heat and add the espresso. Stir well and then add 1/4 cup of milk. Place mixture into the refrigerator and allow to cool....about an hour.
3. Add the ice cubes, chocolate mixture, and remaining 1/4 cup milk to blender. Blend until it is nice and frothy. Serve in a tall glass with wiped cream (optional.)
***I was good and did not add any of my peppermint schnapps but i think it would be even more yummy w/ it added.
Will the paper writing ever end??? I spent the afternoon hiking around Fredericksburg w/my roommate. We went on a hike w/a group that is working to get the trials connected to make a longer one. We walked for about 2 hours. It twas fun, and the few times that the had go across the creak made the walk more exciting.
For dinner i messed w/a latke recipe that i have and came up with:
Autumn Latkes
Ingredients:
1 sweet potato, peeled and shredded
1 apple, peeled and shredded
2 eggs, beaten
1 tbs brown sugar
2 teaspoons ground cloves
2 teaspoons cinnamon
1/2 teaspoon ground nutmeg
4 tbs quaker oats
1/8 cup walnuts, chopped
1/4 cup vegetable oil, for frying
Directions:
1. Put potato and apple into a bowl. Place a few paper towel over them and squeeze out the liquid. Let the mixture sit for a few minutes and then squeeze again to remove more liquid.
2. In a large bowl mix together the potato/apple mixture, eggs, brown sugar, cloves, cinnamon, nutmeg, oats, and nuts, until the mixture is well combinded.
3. Heat the oil in a large skillet over medium high heat.
4. Drop a large spoonful of the mixture into the oil and cook 2-3 minutes on each side, until the bottom is brown.
5. Serve hot with yogurt and/or applesauce.
I am more than ready for the semestor to be over. Taking 20 creadits is not fun...especially when i have projects due in most of them. I'm not to worred about getting most of them done, i just dont' have any free time. The only issue i'm having is with a paper for my IR theory class. It has a weird prompt, and i don't like my thesis and have to change it...not any fun.
On a more intersting note i typed up the last recipe I made...before my workload quadroopled....it doesn't really have a name, i guess itz Chicken & Vegetables w/Wine:
Ingredients:
1 tbs olive oil
1 small onion~ chopped
1 medium squash~ chopped
¼ cup chick peas
1/3 cup corn
3 chicken breasts~ cubed
2 cloves garlic~ minced
1 tbs fresh ginger~ minced
1 tsp coriander???
1 bay leaf
Pinch salt
½ small bottle white wine
¼ cup vegetable stock
1 tsp cornstarch
Directions:
1. Marinate chicken in wine for ½-2 hours.
2. Add olive oil to a medium pan over medium heat. Add onion and cook for 5 minutes. Add chicken and cook for 5 minutes, stirring the chicken around the pan. Save the marinate.
3. Add squash, chickpeas, corn, garlic, ginger, salt, bay leaf, and coriander. Cook for 5 minutes. Add marinate and vegetable stock, cook for 20 minutes or until chicken is tender.
4. Remove chicken and vegetable to serving dish. Add cornstarch and bring liquid to a boil for 2 minutes. Serve over chicken and vegetables.
Since I spend way to much time cooking, I'm gonna waste more time and write up some of the recipes I use. I'll start w/a quiche I made tonight. I had a leftover piecrust in the freezer and since there wasn't really any room for it I had to use it up.
Vegetable Quiche
Makes 6 servings
Ingredients:
1 small onion ~chopped
1/4 pepper ~ chopped
6 baby carrots ~ chopped
3 cloves garlic ~ chopped
1/2 cup frozen spinach
1 1/2 Tbs butter
4 eggs
1 cup milk
1 Tbs Lebni***
1/2 cup cheddar cheese ~ graded
1/4 cup hard cheese ~ sliced
1 deep dish pie crust
***A combination of yogurt and cheese, can be found in Middle Eastern food
stores
Directions:
Preheat oven to 375º.
Melt butter over medium low heat. Add onion, pepper, carrots, and garlic. Cook until vegetables are soft, about 10-15 minutes. Add spinach and cook an additional 2-4 minutes. Turn off stove.
Combine eggs, milk, and Lebni, whisk.
Add Cheese to vegetable mixture. Spoon mixture into piecrust. Add egg mixture.
Bake for 30 minutes, or until quiche has set. Allow to cool for 30 minutes
before serving.
