            <title>Beef stir fry</title>

            <description>    &lt;p&gt;Under a month to go until the end of the school year, and until graduation.&amp;#160; Itz a bit hard to believe.&amp;#160; Until then i&amp;#39;ve got a ton of work to finish.&amp;#160; I made a small dent in my papers and projects today.&amp;#160; By dinner time i was ready for a break so i used some of the beef i bought at super H to make a stir fry.&amp;#160; It turned out very yummy.&amp;#160; The beef made a huge difference.&amp;#160; It tastes so much more tender then the meat from giant.&amp;#160; I guess it makes sense since Asian cooking is where stir fry comes from.&lt;/p&gt;&lt;p&gt;Ingredients:&lt;br /&gt;1/4 pound stir fry beef: sliced&lt;br /&gt;1/4 cup soy sauce&lt;br /&gt;1 tbs rice wine&lt;br /&gt;1/4 tbs rice wine vinegar&lt;br /&gt;1 carrot&lt;br /&gt;1 small onion&lt;br /&gt;1/2 pepper&lt;br /&gt;4 oz mushrooms&lt;br /&gt;2 cloves garlic&lt;br /&gt;1 tbs peanut oil&lt;br /&gt;Chinese 5 spice&lt;br /&gt;rice noodles: cook according to package instructions&lt;/p&gt;&lt;p&gt;Directions:&lt;br /&gt;1. Marinate beef in soy sauce and wine for 1 hour.&lt;br /&gt;2. Slice into matchstick size: carrot, onion, pepper and mushroom.&amp;#160; Chop garlic.&lt;br /&gt;3. Heat 1/2 tbs oil in pan over medium heat.&amp;#160; Add beef and cook until no longer pink.&amp;#160; Remove beef and set aside.&lt;br /&gt;4. Add remaining oil to pan, then cook the onions for 3 minutes.&amp;#160; Add carrots and pepper, cook another 3 minutes.&amp;#160; Add mushrooms, garlic and spice.&amp;#160; Cook for 5 minutes.&lt;br /&gt;5.             <description>    &lt;p&gt;I&amp;#39;ve spend most of the day working on my wonderful Arabic midterm.&amp;#160; At the moment i have a disjointed translation and a few of the questions answered.&amp;#160; It will defiantly take all of tomorrow to finish it.&lt;br /&gt;I made a lasagna dish for dinner.&amp;#160; I still need to work on it a bit, but it was pretty good for the ingredients I had available.&amp;#160; &lt;/p&gt;&lt;p&gt;Chicken lasagna&lt;br /&gt;Ingredients:&lt;br /&gt;3 small chicken breasts&lt;br /&gt;6 oz lasagna noodles, cooked according to package directions&lt;br /&gt;1 small onion, chopped&lt;br /&gt;1/3 carrot, chopped&lt;br /&gt;1/3 green pepper, chopped&lt;br /&gt;2 cloves garlic, smashed &amp;amp; chopped&lt;br /&gt;1 tbs olive oil&lt;br /&gt;tomato sauce ( I don&amp;#39;t think i used enough this time)&lt;br /&gt;mozzarella cheese (the cheese tasted different than usual, more like string cheese and less like baked mozzarella...hard to describe, but i think i need to use ricotta next time....which i normally use in lasagna but didn&amp;#39;t have)&lt;br /&gt;parmesan cheese&lt;br /&gt;salt &amp;amp; pepper&lt;/p&gt;&lt;p&gt;Directions:&lt;br /&gt;1. Preheat oven to 375º. &lt;br /&gt;2.Heat 1/2 tbs oil in a pan over medium heat.&amp;#160; Saute vegetables until soft, about 10 minutes.&amp;#160; Set vegetables aside.&lt;br /&gt;3. Add the other 1/2 tbs oil to the pan.&amp;#160; Cook chicken on both sides until no longer pink.&amp;#160; Add salt &amp;amp; pepper to chicken.&lt;br /&gt;4. Cover the bottom of a small (8x8) baking dish with sauce.&amp;#160; Layer noodle across the bottom (they may need to be broken in 1/2 to fit.)&amp;#160; Layer sauce, 1/2 vegetables, then sprinkle with cheese.&amp;#160; Cover w/noodle, layer w/sauce, chicken, sauce, cheese.&amp;#160; Cover w/noodles.&amp;#160; Repeat 1st layer, then top with last layer of noodles, sauce and cheese.&lt;br /&gt;5. Cover with aluminum foil and cook for 30 minutes.&amp;#160; Remove foil and cook and additional 10 minutes.&lt;br /&gt; &lt;/p&gt;    &lt;p style=&quot;clear:both;&quot;&gt;

            <description>    &lt;p&gt;My coffee wasn&amp;#39;t that good this morning (not sure what twas up, i made it the same way i always do....see previous post)....but it was ok cause&amp;#160; made an awesome tasting mocha in the afternoon.&lt;/p&gt;&lt;p&gt;Itz a combination b/w a recipe for &lt;a href=&quot;http://www.epicurious.com/recipes/recipe_views/views/109560&quot;&gt;serendipity frozen hot chocolate&lt;/a&gt; and a &lt;a href=&quot;http://www.best-chocolate-recipes.com/recipe-frappuccino.html&quot;&gt;mocha frappuccino&lt;/a&gt; recipe&lt;/p&gt;&lt;p&gt;Mocha Frappuccino&lt;br /&gt;1/3 cup espresso or double strength coffee (i used my mocha pot)&lt;br /&gt;1/2 ounce bittersweet chocolate&lt;br /&gt;1 tsp coco powder&lt;br /&gt;1 tsp sugar&lt;br /&gt;1/2 cup milk&lt;br /&gt;just over 1 cup ice&lt;/p&gt;&lt;p&gt;1. Melt the chocolate over a double boiler...make sure that the bowl is high enough that the water does not touch it or the chocolate will not melt correctly (if you have a microwave i think you can melt chocolate easily in it but i don&amp;#39;t gotz one.)&amp;#160; Add the sugar and coco powder and combine.&lt;/p&gt;&lt;p&gt;2. Remove the chocolate from heat and add the espresso.&amp;#160; Stir well and then add 1/4 cup of milk.&amp;#160; Place mixture into the refrigerator and allow to cool....about an hour.&lt;/p&gt;&lt;p&gt;3. Add the ice cubes, chocolate mixture, and remaining 1/4 cup milk to blender.&amp;#160; Blend until it is nice and frothy.&amp;#160; Serve in a tall glass with wiped cream (optional.)&lt;/p&gt;&lt;p&gt;***I was good and did not add any of my peppermint schnapps but i think it would be even more yummy w/ it added.&lt;/p&gt;     &lt;p style=&quot;clear:both;&quot;&gt;

            <description>    &lt;p&gt;Will the paper writing ever end???&amp;#160; I spent the afternoon hiking around Fredericksburg w/my roommate.&amp;#160; We went on a hike w/a group that is working to get the trials connected to make a longer one.&amp;#160; We walked for about 2 hours.&amp;#160; It twas fun, and the few times that the had go across the creak made the walk more exciting.&lt;/p&gt;&lt;p&gt;For dinner i messed w/a latke recipe that i have and came up with:&lt;br /&gt;Autumn Latkes&lt;br /&gt;

&lt;p&gt;&lt;strong&gt;Vegetable Quiche&lt;/strong&gt;&lt;br /&gt;
Makes 6 servings
&lt;/p&gt;&lt;p&gt;
Ingredients:&lt;br /&gt;
1 small onion ~chopped &lt;br /&gt;
1/4 pepper ~ chopped&lt;br /&gt;
6 baby carrots ~ chopped&lt;br /&gt;
3 cloves garlic ~ chopped&lt;br /&gt;
1/2 cup frozen spinach &lt;br /&gt;
1 1/2 Tbs butter&lt;br /&gt;
4 eggs&lt;br /&gt;
1 cup milk&lt;br /&gt;
1 Tbs Lebni***&lt;br /&gt;
1/2 cup cheddar cheese ~ graded&lt;br /&gt;
1/4 cup hard cheese ~ sliced&lt;br /&gt;
1 deep dish pie crust&lt;br /&gt;
***A combination of yogurt and cheese, can be found in Middle Eastern food
stores
&lt;/p&gt;&lt;p&gt;
Directions:&lt;br /&gt;
Preheat oven to 375º.
&lt;/p&gt;&lt;p&gt;
Melt butter over medium low heat.&amp;#160; Add onion, pepper, carrots, and
garlic.&amp;#160; Cook until vegetables are soft, about 10-15 minutes.&amp;#160; Add
spinach and cook an additional 2-4 minutes.&amp;#160; Turn off stove.&amp;#160; 
&lt;/p&gt;&lt;p&gt;
Combine eggs, milk, and Lebni, whisk.
&lt;/p&gt;&lt;p&gt;
Add Cheese to vegetable mixture.&amp;#160; Spoon mixture into piecrust.&amp;#160; Add
egg mixture.&amp;#160; 
&lt;/p&gt;&lt;p&gt;
Bake for 30 minutes, or until quiche has set.&amp;#160; Allow to cool for 30 minutes
before serving.&lt;/span&gt;&lt;br /&gt;
